How to peel Potatoes correctly

Potatoes are a common ingredient in every household especially in Western countries. They especially love it fried, baked and boiled. Potatoes are easy to cook but peeling it correctly can be very tricky. If you don't mind losing some potato flesh while peeling, you should stop reading now. However, if you would like to know how to peel the potatoes correctly, continue reading.

Before I move on further, I would like to put a disclaimer. I do not claim to be an expert in peeling potatoes, but just a person who had done this so many times that I now know the trick to get the most out of your potatoes. First and foremost, is to pick and choose the correct potatoes. If your potatoes has a lot of "eyes", it involves an extra step. Start by washing the potatoes in cold water and gently scrub away the dirt around the potato. This will ensure that the dirt does not rest on the potato flesh when you are peeling them. Then remove the eyes by cutting a V-shape beside it to remove them with a small knife. Then use a slicer to gently peel off the potato skins. After that, immediately place the potatoes in cold water and only remove them when you are ready to cook it.

Sunny Side Up - Eggs

Sunny side up is the term people normally describe for a fried egg with an unbroken yolk. Normally, the white eggs will be cooked evenly but the yolk is half-cooked. As the yolk is orange in colour and it is usually in the middle of the white eggs, it resembles the sun with the clouds. Therefore, many labelled this as sunny side up. During the winter, if you are missing the sun, you may try cooking this sunny side up eggs to cheer yourself up. I know, this sounds funny, but it may work to some extend.

It is however, not very easy to cook a sunny side up eggs. When I first started cooking, I almost always breaks the yolk allowing the yellow liquid to flow out. If I don't break the yolk when I'm breaking the egg, I would break the yolk when I'm flipping the egg on a pan. If you go to hotel for breakfast, you will notice that almost every hotel, a chef will be there to cook your egg right before you. I observed one chef and I notice that he actually time the time taken to cook a sunny side up egg. He did not flip the pan at all and the egg looks really pretty.

raw eggs

If I remember correctly, this is what he did.

  • Heat up the pan with oil and very little butter.
  • Break an egg in a bowl making sure that the yolk doesn't burst.
  • Slowly pour the egg into the middle of the pan.
  • Reduce the fire to medium.
  • Use a spoon to slide the egg from the pan onto a plate after about 60 seconds.

Boiled Eggs

Boiled eggs are the easiest to cook. Depending on whether you want it totally cooked or half-cooked, each way differs only with the time to cook them. There is no accurate time to cook each and every different styles as it really depends on the eggs itself and the surrounding factors. If you have just taken the eggs out from the fridge, it takes longer time. If you have eggs stored at room temperature, it takes shorter time. If you would like to know the exact time, you would need to do a lot of experiments. I wouldn't be discussing here about the timing but more towards how to cook boiled eggs. Even though I use the word boil here, you shouldn't boil the eggs if you are doing half-boiled eggs. But if you are doing a totally cooked boiled egg, you may boil the eggs directly in the water. What I am going to share with you is a resource saving way to cook yourself a nice boiled eggs.

Egg Shells

Boiled eggs, all you need is hot water and eggs. What I normally do is that, I would boil at least one bowl of water. Pour the boiled water into a container which has a tight seal. I prefer the metal container as oppose to plastic container as hot water doesn't goes very well with plastic. If you have a ceramic container, that ceramic container would be good too. Eggs could break very easily if you have just removed the eggs from the fridge and place it into the hot water. In order to ensure that the eggs doesn't break, you could try sprinkling some salt into the water first, after resting the eggs in normal temperature, slowly place the eggs into the hot water. Thereafter, leave it to cook for a few minutes and remove it from the water. Do not crack the eggs open immediately, but allow it to rest for a few minutes. In order to remove the shells from the eggs, roll the eggs gently with a towel or just with your palm on a flat surface slowly breaking the shells. Then peel the shells away and serve it warm.

Breaking an Egg without breaking the yolk - Eggs

When I first started cooking, one of the first few things which my mom trained me to cook are eggs. Eggs cooks easily. Before that, I was of the opinion that eggs are the easiest thing to cook. I mean, it is just a small oval shape thing with some liquid in it. How hard could it be? Now, I know that in order to cook an egg or maybe burn an egg, is easy, but to cook it the correct way, it takes a lot to practice.

Eggs

Let me start of with discussing how to break an egg. Eggs may look hard on the outside, but it is actually very fragile. In order to break an egg, you will need an edge. You may use an edge of a bowl or the edge of the pan - you are going to cook the eggs in or maybe even a spoon, if you are a professional. In this discussion, I am going to use the edge of a bowl to break an egg.

If you are right-handed, hold up an egg on your right hand using only three fingers. Do not grab it as you need to allocate some space for the eggs to break. Gently hit the edge of a bowl one or two times until the eggs crack. Once the shell cracks, use both hands to slowly open the eggs allowing the liquids to fall into the bowl. If the yolk broke, then you know that you fail to break an egg without breaking the yolk. Try again a few times and try to see what you did was wrong. Eventually, you will be successful in breaking an egg without breaking the yolk.
