Thai Fried Rice

  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon chopped fresh Thai red chili pepper
  • 8 ounces boneless skinless chicken breasts, cut into bite-size pieces
  • 2 cups cold cooked rice
  • 1 tablespoon sugar
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 2 tablespoons chopped shallots
  • 1/3 cup Thai basil
  • 1 tablespoon chopped fresh cilantro

Directions:

  1. In a wok or large skillet, stir-fry garlic in oil until golden; then add chilies and chicken and stir-fry until chicken is cooked.
  2. Add rice, sugar, fish sauce, and soy sauce, and stir-fry, mixing gently.
  3. When well mixed, add shallots, basil leaves and cilantro; cook another minute or so, and serve.
  4. If you desire, serve with lime wedges, chile sauce, fish sauce, or soy sauce at the table.

Fried Rice Recipe

Recently I had one conversation with a friend of mine and we had this conversation about fried rice. My friend told me that if a restaurant doesn't know how to fry a simple fried rice, we should not go back to that restaurant. Fried rice is considered to be the basic in a Chinese restaurant. So far, I did not come across any Chinese restaurant which doesn't cook a decent fried rice. After many trials and errors, and of course some research on the many recipes on the internet, below is my final conclusion on how to cook yourself a decent fried rice. I hope you enjoy this recipe. Good or bad, please let me know so that I can improve myself further. Thank you in advance.

Ingredients:

  • 1 tablespoon butter or 1 tablespoon margarine
  • 2 eggs, beaten
  • 1 tablespoon butter or 1 tablespoon margarine
  • 1/4 cup chopped onion
  • 1/4 cup chopped green pepper (optional)
  • 2 cups rice, prepared and cooled
  • 1/2 cup cooked pork (optional) or 1/2 cup cooked shrimp (optional) or 1/2 cup cooked chicken (optional)
  • 1/4 cup soy sauce
  • 1/2 cup cooked peas (optional)

Cooking Method:

  1. Melt 1 tablespoon butter in skillet or wok. If you prefer oil, it is okay to use oil too.
  2. Scramble eggs in butter then break up the cooked eggs into small pieces and set aside.
  3. Melt 1 tablespoon butter in skillet or wok.
  4. Saute onions and/or green peppers in butter for 3 minutes.
  5. Combine eggs, onions, rice, and meat.
  6. Stir in soy sauce until color of rice is uniform.
  7. Stir in peas and serve warm.

Malaysia's Nasi Goreng Kampung

The main ingredient for Malaysia's nasi goreng kampung is the anchovies. If you do not see anchovies, then it is not nasi goreng kampung, it is something else. If you were to go to any Malay restaurants or hawker stalls, they normally have nasi goreng kampung as one of their mains in their menu. I didn't quite enjoy this dish at first, as the anchovies are tough when it is wet - the first time, the cook didn't do a good job. But after trying a few times at other stalls, I started to like this nasi goreng kampung. It really depends on the cook, whether he knows how to make the anchovies stays crispy. For this recipe, remember not to wet your anchovies after frying, as it will "destroy" your dish. Yes, destroy. I hope you enjoy this recipe.

Ingredients:
  • 2 cups day old rice
  • 1 tablespoon butter
  • 2 shallots or onions , sliced and pounded
  • 1/2 cup anchovies, rinsed
  • 1 tablespoon soy sauce
  • 1 teaspoon white pepper
  • 6 bird's eye chili peppers
  • 2 eggs, beaten
  • 2 stalks green onions, sliced (for garnish) - optional
Steps:
  1. Heat up your wok until it is very hot and add 2 tablespoons oil. Then turn the heat to low.
  2. Add anchovies and fry until desired level of crispiness.
  3. Add butter, onions or shallots and chili peppers.
  4. Fry until aromatic.
  5. Add rice and soy sauce making sure that you coat the rice well.
  6. Push rice to the sides of your wok and add eggs in the middle. Add oil if required.
  7. Then coat the rice with the eggs well. Add white pepper. Dish out and garnish with green onions if desired. Serve hot.

Chinese Fried Rice

Ingredients:

  • Rice
  • 3/4 cup finely chopped onion
  • 2 1/2 tablespoons oil
  • 1 egg, lightly beaten
  • soy sauce
  • sesame oil
  • vegetable - kai lan
  • boneless pork or chicken meat, chopped
  • 4 green onions, chopped
  • 2 tablespoons light soy sauce

Cooking Steps:

  1. Heat 1 tbsp oil in wok; add chopped onions and stir-fry until onions turn a nice brown color, about 8-10 minutes then remove from wok.
  2. Add oil and fry the eggs by breaking it into pieces. Add salt and sesame oil then remove from wok.
  3. Heat 1 tbsp oil in wok; add selected meat to wok and vegetables for about 3 minutes. Then add rice, green onions, and bean sprouts, tossing to mix well; stir-fry for another 3 minutes.
  4. Add 2 tbsp of light soy sauce and chopped egg to rice mixture and fold in; stir-fry for 1 minute more; serve.

Fried Rice for Kids

Fried rice is the easiest thing to cook and it is good for working moms. You may cook this ahead earlier the night before or even in the morning itself. The ingredients are easy to prepare and it doesn't take a very long time to cook.

Ingredients:
  • Leftover cooked rice
  • 1 medium onion (chopped)
  • 2 stalks celery (chopped)
  • 2 carrots (diced)
  • 1 cup frozen peas
  • 3 eggs (beaten)
  • 1/4-1/2 cup soy sauce (to taste)
  • pepper
Steps:
  1. Heat up oil in a wok and add onion, celery, and carrots.
  2. Saute for about 5 minutes.
  3. Add peas and cook one minute more until peas are thawed.
  4. Push the veggies to one side of the wok and scramble eggs in empty side of skillet.
  5. Mix eggs into veggies and season with pepper. Then add soy sauce.
  6. Then slowly mix in rice by the spoonful until all rice is added and all ingredients are well blended.
  7. Fry until steamy hot stirring often.

Thai Fried Rice

On a busy working day, it is difficult to find time to cook a meal for your school-going kids. There are many shops cropping up everyday and eating out is preferred by most kids. But eating everyday is expensive. So I tend to cook for myself as well as my love ones. It is much healthier as I am able to monitor the kind of food they put into their stomach. The only tricky part here is to find time to cook as well as to make it delicious. Here is one recipe I would like to share with all the working moms out there. Ingredients:
  • Cooked rice
  • Minced chicken
  • Tuna
  • Pineapple
  • Garlic
  • Oil
  • Tomato
  • Onion
  • Carrot
  • Spring Onion
  • Sugar
  • Ground Pepper
  • Light Soy Sauce
Steps:
  1. Break the cooked rice and place them in a bowl. Add the sugar, light soy sauce and ground pepper and mix it with the rice.
  2. Heat up the oil in a wok and add the garlic, minced chicken and tuna.
  3. Then add the tomato, onion, carrot, spring onion and pineapple. Continue mixing.
  4. Add in the rice for another 2 minutes. Serve warm.
