Nasi Lemak / Coconut Milk Rice

Nasi Lemak or coconut milk rice is one of the most popular dish in Malaysia and Singapore. It is basically rice boiled with coconut milk and it is usually served with spicy sambal, anchovies, hard-boiled egg and peanuts. Nasi lemak is so popular that it may be a meal for breakfast, lunch, dinner or even supper.

Ingredients:
  • 2 cups uncooked rice, washed
  • 1 cup thick coconut milk, from 1 coconut
  • 2 cups water
  • 2 screwpine leaves or pandan leaves, knotted
  • 2 cm fresh ginger, sliced
  • 3 onions, sliced
  • 1 cinnamon stick
  • 1 star anise
  • salt
  • sugar
Directions:
  1. Mix all ingredients in rice cooker and cook until the rice is cooked and dry.
  2. Serve it hot with sambal, sliced cucumber, fried peanuts and anchovies and also hard boiled egg.

Sambal Squid with Nuts

I love Malay food and my all time favourite food is nasi lemak. Nasi lemak often comes with fragrant rice cooked with coconut milk, ikan bilis, peanuts, slices cucumbers and sambal. For those who wish to add dishes to go together with nasi lemak, fried eggs, curry chicken, rendang chicken, sambal squids and mutton curry are some of the local choices.

To cook yourself sambal squid with nuts, you will need the following ingredients:-

  • 60ml vegetable oil
  • 1 spoon of tamarind sauce
  • 125ml of coconut milk
  • salt and sugar
  • 3 spoons of crushed peanuts
  • dried squids
  • red onions (big and small) and garlic
  • shrimp paste
  • chili paste
Steps:
  1. Start by heating up the oil in a skillet and stir in the red onions, shrimp paste and chili paste until it is fragrant.
  2. Add in the tamarind sauce, coconut milk, salt and sugar for taste.
  3. Lower the fire and continue cooking until the sauce thickens. Then add in the crushed peanuts.
  4. Add in the squids and cook for another 2 minutes. Then remove from heat and serve it with rice or nasi lemak.

Nasi Lemak - Fragrant Rice

Nasi lemak doesn't need any introduction. The picture itself speaks for itself. If you would like to try to make you very own nasi lemak, which every Malaysians should try to do it at least once in their lifetime, do try this recipe. If you are a fan of nasi lemak just like me, you should at least know the steps to cook it lar. I hope you enjoy this recipe. Have fun cooking.

  • 1/4 cup dried anchovy, extra, pounded
  • 5 -6 tablespoons chili paste
  • 2 onions, pounded
  • 1 garlic clove, crushed
  • 1 teaspoon shrimp paste (belacan)
  • 2 tablespoons tamarind juice
  • 1 big onion, sliced
  • 1/2 cup oil
  • 2/3-1 cup water
  • 2 -4 tablespoons sugar
  • salt

Steps:>

  1. Heat oil and saute' onions and garlic for 1 minute
  2. Add chilli paste and belacan and fry till fragrant, about 3 minute.
  3. Mix tamarind juice and water into chilli mixture and cook for another 5 min or till sauce thick.
  4. Add sliced onion, anchovies, salt and sugar and cook for another 2 minute.
