Tomato Soup Recipe

Who is in for a vegetable soup today? Vegetable soups are not only easy to cook but it is also a healthy food. Tomato soup, for example are vitamin C rich and is good for your eyes. So today, I am going to show you how to cook a simple tomato soup. Click below to see how its done. Ingredients:
  1. 2 lbs plum tomatoes
  2. 6 garlic cloves, peeled and whole
  3. 1/4 medium red onion
  4. 1 tablespoon olive oil
  5. 1 tablespoon balsamic vinegar
  6. 2 sprigs oregano, remove leaves from stem
  7. 3 -4 basil leaves
  8. salt
  9. pepper
  10. 2 cups fat-free vegetable broth or 2 cups fat-free chicken broth or 2 cups water
Cooking Method:
  1. Pre-heat oven to 375 degrees.
  2. Then wash and the cut tomatoes into half. Then place them in a shallow baking dish cut side down.
  3. Add cut onions, garlics, oregano and basil into the pan.
  4. Then drizzle the vegetables with olive oil and balsamic vinegar.
  5. Season with salt and pepper and bake for 45 minutes in the oven.
  6. Place the roasted vegetables in a food processor and begin to puree. Slowly add broth or water until soup has desired consistency. Continue blending until smooth.
  7. Serve garnished with cheese if desired.
