Who is in for a vegetable soup today? Vegetable soups are not only easy to cook but it is also a healthy food. Tomato soup, for example are vitamin C rich and is good for your eyes. So today, I am going to show you how to cook a simple tomato soup. Click below to see how its done.
Ingredients:
- 2 lbs plum tomatoes
- 6 garlic cloves, peeled and whole
- 1/4 medium red onion
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 2 sprigs oregano, remove leaves from stem
- 3 -4 basil leaves
- salt
- pepper
- 2 cups fat-free vegetable broth or 2 cups fat-free chicken broth or 2 cups water
Cooking Method:
- Pre-heat oven to 375 degrees.
- Then wash and the cut tomatoes into half. Then place them in a shallow baking dish cut side down.
- Add cut onions, garlics, oregano and basil into the pan.
- Then drizzle the vegetables with olive oil and balsamic vinegar.
- Season with salt and pepper and bake for 45 minutes in the oven.
- Place the roasted vegetables in a food processor and begin to puree. Slowly add broth or water until soup has desired consistency. Continue blending until smooth.
- Serve garnished with cheese if desired.
