Cheesy Crab Soup

Recently, I am loving everything with cheese and I would like to share with you this cheesy crab soup which I have just tried the other day. It is delicious and very simple to do. Oh yes, it involves a lot of ingredients, but believe me, it is worth it. If you do not have all the ingredients, do not worry. Just try it, you may like it.

Ingredients:
  • 1/4 cup butter
  • 1 small white onion, chopped
  • 2 celery ribs, chopped
  • 1/4 cup flour
  • 4 cups milk
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dry mustard
  • 1/2 teaspoon pepper
  • 1/8 teaspoon paprika
  • 1/8 teaspoon chili powder
  • 1 cup frozen corn, thawed
  • 1 (14 1/2 ounce) can diced tomatoes, drained
  • 12 -16 ounces fresh lump crabmeat
  • 2 1/2 cups shredded sharp cheddar cheese (or mild cheddar)
  • salt, if needed, to taste
  • 2 tablespoons chopped parsley
Directions:
  1. Firstly, melt the butter in large saucepan over medium heat. Then sauté the onion and celery until tender.
  2. Then add flour and continue stirring.
  3. Next, stir in the milk gradually; add Worcestershire sauce, mustard, pepper, paprika and chili powder. Then bring it to a simmer.
  4. Add corn, tomatoes and crabmeat; simmer about another 10 minutes.
  5. Stir in the cheese until soup is heated through and until the cheese is melted.
  6. Then serve with the chopped parsley.
