Roast Duck the Chinese Style Way

Roast duck is a very popular dish among the Chinese. Chinese loves their duck roasted and this is is very often serve in Chinese restaurants ranging from budget restaurants to really expensive restaurants. Ducks are not a very common ingredient to find in the market in Kuala Lumpur therefore, roasted ducks can come with a very high price. the price for a roasted duck can be priced from RM32 a bird. So, if you are on a budget and would like to learn how to roast a duck, just follow these few simple steps. I hope you enjoy this recipe. Good luck!

Ingredients:
  • One duck
  • 2 teaspoons salt
  • 4 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 cup of water
  • 1 tablespoon oil
  • 1 tablespoon finely chopped spring onion
  • 1 teaspoon finely chopped fresh ginger root
  • 2 tablespoons Chinese rice wine
  • 1 tablespoon hoisin sauce
  • 2 teaspoons five-spice powder
Cooking Method:
  1. First, wash and clean the duck. Then blanch in a pot of boiling water for a few minutes, remove and dry well. Thereafter, marinate the duck with salt and tie the neck tightly with string.
  2. To make the stuffing, heat the oil and add all the ingredients. Boil it for a few minutes and pour the mixture into the cavity of the duck and sew it up securely.
  3. Then dissolve the honey with vinegar in warm water and brush it all over the duck. Hang the duck up to dry and coat it again for a few more times.
  4. To cook the duck, first preheat the oven to 400 degrees F. Then hang the duck head down on the top rack, and place a tray of boiling water at the bottom of the oven. Reduce the heat to 350 degrees F. (180 degrees C., Gas 4) after 25 minutes or so, and cook for a further 30 minutes, basting with the remaining coating mixture once or twice.
  5. When the duck is cook, chop it into pieces and serve it with rice. Use spring onions as garnish.
