Chicken Satay

Chicken Satay is very popular in Kajang. The best thing about this dish is the peanut sauce. Satay is commonly served with slices of cucumbers and ketupats (rice wrapped in banana leaves). This dish is also commonly served on barbecue parties as it is easy to prepare and cook. It doesn't take a very long time to cook and therefore, you wouldn't be afraid that your guests may go hungry for too long. I hope you like this recipe.   • 1/2 cup creamy peanut butter
  • 1 cup coconut milk
  • 2 tablespoons fresh lime juice
  • 2 tablespoons soy sauce
  • 1 1/2 tablespoons dark brown sugar
  • 1 teaspoon ground ginger
  • 2 garlic cloves, chopped
  • 1/2 teaspoon red pepper flakes
  • 2 lbs chicken cutlets
  • 30 wooden skewers, soaked for 30 mins
  1. First mix all the first 8 ingredients and place it into the refrigerator, leaving some to marinate the chicken.
  2. Then cut chicken into strips and marinate in the remaining sauce for 1 hour.
  3. Thread strips onto skewers and barbecue the chicken until it is cooked.
  4. Bring refrigerated sauce to room temp and use as a dip for the chicken.
