Lotus Root Soup

If you have the time and fancy some soup, why not try the lotus root soup. The lotus root soup is easy to prepare and cook. If you have the time, double boiling the soup would enhance the flavour of the soup further. But if you do not have the time and especially doesn't want to waste too much time cleaning, just boil the whole thing in a pot. Enjoy.

Ingredients:

  • 1 lb lean pork ribs
  • 1 lotus root
  • 2 dried honey dates
  • 8-10 dried red dates
  • 6 cups water
  • Salt to taste

Cooking Method:

  1. First, cut the pork ribs or pork bones into pieces and boil them in the water. Remove the dirt with a sieve-this step is important so that your soup is not oily and dirty.
  2. Peel off the skin of lotus root and cut into slices.
  3. Then, soak the dried honey dates and dried red dates in warm water for 5 minutes.
  4. Add all the ingredients and cover the pot and simmer for 1 hour or until well cooked. Then, add salt to taste.
