Sandwiches

Sandwiches are great for breakfast. You may prepare the night before so that you can do not need to wake up too early to prepare your breakfast before work. Chicken is not the only ingredients you may use, you may also substitute chicken with bacon or turkey meat or any other meats that you like. You may also add cheese if you like it. Enjoy and take care.

  • 2 whole boneless chicken breasts
  • 1 stalk celery
  • 1 onion, quartered
  • 1 cup celery, chopped
  • 1 1/2-2 cups mayonnaise
  • 2 tablespoons lemon juice
  • salt and pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dill seed
Directions:
  1. Place chicken, celery stalk and onion in saucepan with water to cover.
  2. Bring to a boil and simmer 20 minutes or until chicken is done.
  3. Drain and discard onion and celery.
  4. Let chicken cool.
  5. In a food processor chop chicken.
  6. In a medium sized bowl combine chicken with mayonnaise, salt& pepper, parsley, dill seed, chopped celery and lemon juice.
  7. Cover and refrigerate until chilled.

Fried Noodles with Black Bean Sauce

Since my last post, I have been trying to find another fried noodles recipe as I just love my noodles fried. By frying the noodles together with the ingredients, the noodles is more flavourful compared to soup noodles. To kick up the extra flavour, I would suggest you to use peanut oil instead of the normal oil. Remember to use a lot of ingredients if you like your noodles to taste better. You may also add extra ingredients, such as prawns or squids to enhance the flavour of the noodles. Enjoy.

  • 1 tablespoon peanut oil
  • 2 garlic cloves, crushed
  • 1 tablespoon fresh gingerroot, grated
  • 6 spring onions or 6 green onions, cut into 3cms lengths
  • 1 kg rice noodles, fresh - 2 cms thickness
  • 2 tablespoons black bean sauce, bottled
  • 2 tablespoons chinese rice wine (shao hsing)
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon soy sauce
  • 2 tablespoons sugar
  • 1/2 teaspoon sesame oil
  • 1 tablespoon chives, 5cm lengths
Directions:
  1. Heat wok, add oil and stir-fry the garlic, ginger and spring onion for 2 minutes or until fragrant.
  2. Add the noodles and stir-fry until soft.
  3. Add the black bean sauce, chinese rice wine, rice wine vinegar, soy sauce, sugar and seasame oil and stir-fry until the sauce boils and thickens slightly.
  4. Serve immediately and garnish with chives.

Pork Stew

Cold weather makes me very much hungrier than warm weather. It is very warm nowadays as it hasn't been rained for many days now. The water in the dam is getting lesser and the water rationing will start today. For those who are in cold countries, you may try this comfort food recipe, pork stew. The longer you cook this, the better it becomes.

  • 1 1/2 lbs boneless pork chops, 3/4 inches thick,cut into 1 inch cubes
  • 1 1/2 tablespoons flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 1/2 tablespoons olive oil
  • 4 ounces trimmed and sliced portabella mushrooms
  • 2 cups sliced onions
  • 1 cup dry white wine
  • 1/2 teaspoon dried basil
  • 3/4 teaspoon ground coriander
  • 3/4 teaspoon dried rosemary, crushed
  • 2 tablespoons fresh lemon juice
  • parsley or cilantro (to garnish)
Directions:
  1. Toss the pork cubes in flour, salt, pepper and paprika, and in a large saucepan, brown them in the olive oil.
  2. Add portabella mushrooms and sliced onion and saute for 5 more minutes.
  3. Stir in the wine, basil, coriander and rosemary, scraping up any browned bits on the bottom of the pan.
  4. Cover stew and cook over low heat for an hour; uncover and cook for another 15 minutes or until liquid thickens up a little.
  5. Just before serving, stir in the fresh lemon juice; garnish with fresh parsley or cilantro.

Hokkien Mee

The word "Hokkien noodles" are different when it comes to the mind of the people in the north and the south of Peninsula Malaysia. The people in the north especially those in Penang, generally relate to prawn noodles as the common Hokkien noddles. Whereas, the people in the middle part, towards the southern part generally relate hokkien noodles as the "tai lok mee".

I actually didn't mind between the two as I love both hokkien nooddles. Even though both of them are very different from each other, they both tastes really good. Good food is to be shared by everyone to anyone. So here is the recipe for cooking "tai lok mee". I hope you enjoy it. P/S: This recipe is also good for making box noodles.

  • 600g hokkien noodles
  • 2 eggs, beaten
  • 1 tablespoon water
  • 60 ml vegetable oil
  • 2 tablespoons grated fresh ginger
  • 4 cloves garlic, crushed
  • 4 small fresh red chilies, seeded,sliced
  • 2 teaspoons sugar
  • 200 g red capsicums, seeded,sliced
  • 150 g green capsicum, seeded,sliced
  • 4 green onions, sliced
  • 100 g shredded Chinese cabbage
  • 400 g Chinese barbecue pork, sliced
  • 80 ml kicap manis
  • 60 ml oyster sauce
Directions:
  1. Rinse noodles under hot water; drain.
  2. Transfer to a large bowl, separate with a fork (being careful not to break them).
  3. Heat a large oiled non-stick pan; pour in half the combined eggs and water.
  4. Swirl pan to make a thin omelette; cook until just set.
  5. Transfer omelette to board, roll tightly, cut into thin strips.
  6. Repeat with remaining egg mixture.
  7. Heat 1 tablespoon of the oil in a wok or large pan; stir-fry ginger, garlic, chilli and sugar until fragrant.
  8. Add vegetables; stir-fry until cabbage is just wilted.
  9. Remove vegetables from pan.
  10. Heat remaining oil in same pan; stir-fry noodles 2 minutes.
  11. Add vegetables, pork and combined sauces; stir-fry until heated through.
  12. Serve sprinklered with omelette strips.

Big Breakfast

This is not the easiest breakfast to prepare as it involves a lot of work and it requires a substantial amount of time. But if you do it right, you can do it very fast. This is a perfect breakfast if you would like to impress your girlfriend or your wife. Drop me a comment if you like this recipe.

  • 1/4 lb sausage, cut into 1/2 inch slices, quartered
  • 1/4 cup oil
  • hash brown potatoes
  • 1/4 cup green pepper, chopped
  • 3 slices cheese spread, cut in half diagonally
Directions:
  1. Cook sausage in large skillet over medium heat until lightly browned.
  2. Remove from skillet with slotted spoon.
  3. Add oil; heat over medium high heat.
  4. Add hash brown potatoes and green peppers.
  5. Cover; cook 8 to 10 minutes or to desired crispness.
  6. Stir in sausage.
  7. Remove from heat; top with the cheese.

Iced Coffee

Coffee is my favourite cup of drink to start of my day everyday. I love cappuccino - coffee served with two parts of milk. There are many pre-packed coffees in the market due to the growth in the love of coffees and this is also triggered by the limited time we have as we are so busy with work. These pre-packed coffees however can be very expensive compared to the ones where they are separately packed.

In view of the recent hike in the price of everything, we must do whatever we can to save money. If you would like to prepare your coffee well ahead or for serving a few people at the same time, do try this recipe. Loose the ice if you like your coffee hot. If you insist on ice, you may also prepare your coffee by freezing them to prevent your coffee from being diluted when the ice melts.

Directions:
  1. Combine brewed coffee and sweetened condensed milk in a large pitcher.
  2. Refrigerate until chilled.
  3. Serve over ice.

Fried Spaghetti

The past week I have been craving for spaghetti. This sudden crave is brought about when I went to Ikea last week to get a new shoe rack for myself. Ikea is very good in their job in decorating their kitchen shelves and they have these beautiful glass bottles with pictures of spaghettis in it. They make very good decoration for the kitchen, I thought. But nothing is good if you can't eat it, right?

There are many ways of cooking spaghetti. You may fry it or boil it and mix them with a variety of sauce. I personally like my noodles dry, either with soy sauce or fried. To start off, I will need the following ingredients:-

  • 4 tablespoons butter
  • 3 cups cooked spaghetti (or other pasta)
  • 2 eggs (large)
  • 1/3 cup milk
  • 1/3 cup parmesan cheese
  • 2 tablespoons fresh parsley
  • fresh ground pepper
Directions:
  1. Melt the butter in a heavy nonstick skillet.
  2. Have the pasta out at room temperature in a large bowl.
  3. In a small bowl, beat together the eggs, milk, cheese, fresh parsley and/or chives, and a lot of freshly ground black pepper.
  4. Pour egg mixture over pasta and toss it well.
  5. When butter has heated past the point of foaming, add pasta and flatten into a big pancake.
  6. Cook over medium heat until the bottom forms a golden brown crust.
  7. Flip the"pancake" over and continue to cook until that side also forms a golden brown crust.
  8. Slide pancake out onto a hot plate; cut in wedges.
  9. Enjoy it hot.
