Mee Goreng Mamak or Maggi Goreng

Mee Goreng is my all time favourite on mamak food. Whenever I go to a mamak restaurant, I would either order myself a mee goreng or maggi goreng. I am more inclined towards the latter because it is must tastier and it goes really well with seasoned chicken also known as ayam goreng berempah in the Malay language. For this dish, you can either use the yellow noodle or maggi mee. Either one should be fine. To start off, you will need the following ingredients:

  • 500 g fresh yellow noodles or maggi mee
  • 50 ml oil
  • 100 g deep fried tofu
  • 1 teaspoon curry powder
  • 1 medium onion, choppede
  • 1 ripe Tomato, diced
  • 1 tablespoon hot chili sauce
  • 4 tablespoons ketchup
  • 1 1/2 tablespoons light soy sauce
  • 2 eggs, lightly beaten
  • 1 stalk spring onion, sliced
  • 1 large green chili, deseeded and sliced
  • 2 cucumbers, chopped

Steps:

  1. First, place the noodles or maggi mee into a boiling pot of water. Then quickly drain it and put it aside. Here, you may use cold water to slow down the cooking.
  2. Then heat the oil in a wok. Add curry powder or maggi curry powder and onion and stir-fry over medium heat until soft, about 4 minute.
  3. Add the noodles, tomato, chilli sauce, tomato sauce and soy sauce and stir-fry over medium heat for 3 min, mixing well.
  4. Pour over the beaten egg and leave to set for a min or so, then mix in with the noodles.
  5. Add the tofu, spring onions, cucumber and chilli.
  6. Serve with additional tomato and chilli sauce, and cucumber slices on the side, if desired.

Abalone Soup

This is a good dish to be served during the Chinese Lunar Year celebration. As abalone is an expensive dish, which costs about RM90 and above, depending on the size of the abalone, we normally only serve abalone during the eve of the Chinese New Year. Previously, abalone takes hours to cook. But now, as canned abalone is available, things are much simpler now. An abalone soup can be prepared and served within minutes. Here are the ingredients you will need and the steps to cook. I hope you will enjoy this recipe.

  • 1/2 cup canned abalone, sliced
  • 1/3 cup bamboo shoot, sliced
  • 4 dried Chinese mushrooms (prepared by soaking in hot water for ten minutes, then squeeze and remove stems and slice)
  • 1/2 lb chinese greens, cut into 1 1/2-inch lengths (bok choy)
  • 2 quarts chicken broth
  • salt
  • 1 egg
Directions:
  1. Bring broth to a boil and add salt if using. Add Chinese greens; boil 2 minutes; add mushrooms and bamboo shoots; boil 5 minutes more. Add abalone before serving. Break raw egg into soup and let set 5 minutes, then stir into soup. Serve hot.

Kam Heong Lala Recipe

Clams are easy to cook and is a fast and cheap dish to be serve on any occasion. Although it is not a popular dish to be serve on a barbecue party, I would suggest you to do so. It is easy to cook and prepare and most importantly, it is delicious. While waiting for your barbecue meat to be ready, try cooking a plate of clams for your guests. I am sure they will love it. Just follow these simple steps.

Ingredients:
  • 1 kg clams
  • 2 tbsp dried shrimps
  • 1/4 cup hot water
  • 1 tbsp curry powder
  • 2 tbsp cooking oil
  • 3 shallots finely chopped
  • 3 garlic cloves minced
  • 2 ginger slices minced
  • 2 chilli padi
  • 1/2 tbsp soy bean paste
  • 4 sprigs curry leaves
Cooking Method:
  1. Clean the clams and set aside.
  2. Heat cooking oil in wok. Stir fry chopped dried shrimps for 1 minute. Then add the shallots, garlic, ginger, chilli, taucheo and curry leaves. Stir fry until fragrant.
  3. Then add the clams and curry paste to the wok. Cook the clams and when all the clams are opened, remove from heat. Thicken the sauce with cornstarch.

Roast Duck the Chinese Style Way

Roast duck is a very popular dish among the Chinese. Chinese loves their duck roasted and this is is very often serve in Chinese restaurants ranging from budget restaurants to really expensive restaurants. Ducks are not a very common ingredient to find in the market in Kuala Lumpur therefore, roasted ducks can come with a very high price. the price for a roasted duck can be priced from RM32 a bird. So, if you are on a budget and would like to learn how to roast a duck, just follow these few simple steps. I hope you enjoy this recipe. Good luck!

Ingredients:
  • One duck
  • 2 teaspoons salt
  • 4 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 cup of water
  • 1 tablespoon oil
  • 1 tablespoon finely chopped spring onion
  • 1 teaspoon finely chopped fresh ginger root
  • 2 tablespoons Chinese rice wine
  • 1 tablespoon hoisin sauce
  • 2 teaspoons five-spice powder
Cooking Method:
  1. First, wash and clean the duck. Then blanch in a pot of boiling water for a few minutes, remove and dry well. Thereafter, marinate the duck with salt and tie the neck tightly with string.
  2. To make the stuffing, heat the oil and add all the ingredients. Boil it for a few minutes and pour the mixture into the cavity of the duck and sew it up securely.
  3. Then dissolve the honey with vinegar in warm water and brush it all over the duck. Hang the duck up to dry and coat it again for a few more times.
  4. To cook the duck, first preheat the oven to 400 degrees F. Then hang the duck head down on the top rack, and place a tray of boiling water at the bottom of the oven. Reduce the heat to 350 degrees F. (180 degrees C., Gas 4) after 25 minutes or so, and cook for a further 30 minutes, basting with the remaining coating mixture once or twice.
  5. When the duck is cook, chop it into pieces and serve it with rice. Use spring onions as garnish.

Mango Sticky Rice Recipe - Thai Dessert

Mango Sticky Rice is a very popular dessert among the Thais. The main ingredient for this dessert is the mango. Whether the dessert will taste sour or sweet depends on the mango used for this dessert. To make a good mango sticky rice, I would strongly recommend you to choose the sweet ones instead of the sour ones.

Ingredients:

  • 1/2 cup rice
  • 1 (14 ounce) can coconut milk
  • 1/2 cup sugar
  • 1 mango, sliced

Directions:

  1. Boil the rice with coconut milk, water and the first half of the sugar.
  2. Sauce: In a medium saucepan, boil the rest of the coconut milk with the second half of the sugar.
  3. Keep this at a full boil until the rice is cooked, or until it reaches a thick, syrupy consistency.
  4. Then arrange the cooked coconut rice in a bowl and place it on a plate and thereafter dribble a bit of the sauce over the whole thing.

Happy New Year 2014

Happy New Year 2014 to everyone. I hope that you will have a great year ahead of you. So, what is your new year resolution this year? I got to be honest. I am doing a very bad job trying to follow my previous year' resolution. My resolution last year was to do more cooking and to maintain my weight. In the end, I didn't do a lot of cooking, just some and I gain weight. This is very upsetting and so, this year I decided to keep it simple. My new year resolution this year is to eat healthy and to be happy. This should be simple enough to keep up. What is your new year resolution for this year?
