Banana Cake Recipe

Banana grows in clusters which hands from the top of the plant. Banana is rich in fiber and is very good for constipation. There are many ways of making banana interesting and one of them is to make a banana cake. Banana cake is simple and easy to do. All you need is just the following ingredients. Just follow the steps as discussed below and you will have your banana cake in no time.

Ingredients:
  • 125 g butter
  • 1 cup sugar
  • 1 egg
  • 1 1/2 cups flour
  • 2 tablespoons milk
  • 1 teaspoon baking soda, dissolved in the milk
  • 1 teaspoon baking powder
  • 3 mashed ripe bananas
  • 1 teaspoon vanilla essence
  • 1 pinch salt
Directions:
  1. Mix the butter, sugar, egg and soda thats been dissolved in the milk. Then add bananas and dry ingredients and vanilla essence and mix well.
  2. Bake in 8 inch square pan in moderate oven (350F or 180C) for 30-40 minutes or until skewer comes out dry.
  3. Ice with favourite icing.

Baked Tofu

Tofu is made of soy beans. It is very common for vegetarians to opt for tofu instead of meat as tofu contains enough protein for our daily diet. I personally love tofu very much because it is easy to cook compared to meat. However, tofu can taste very bland. In order to spice things up, Try to use more flavour enhancing ingredients and you'll be amazed with the result.

  • 2 tablespoons dark sesame oil
  • 2 tablespoons tamari soy sauce
  • 1 tablespoon rice wine or 1 tablespoon sake or 1 tablespoon dry sherry
  • 1 tablespoon rice vinegar or 1 tablespoon cider vinegar
  • 1 garlic clove, minced
  • 2 tablespoons finely minced onions
  • 1 teaspoon grated fresh gingerroot
  • 3 tablespoons water
  • 1/2 teaspoon hot chili paste
Directions:
  1. For best results, tofu should be "pressed" in order to remove excess liquid and absorb the flavors of the marinade.
  2. Press tofu block between two plates, weighted down with a cast iron pan, large bowl of water, or heavy cans, for about 30 minutes.
  3. Halfway through, you may dump the plate of water and flip the tofu block.
  4. To make marinade, simply whisk together the ingredients in a bowl.
  5. After tofu is pressed, cut the block into small cubes or triangles.
  6. Place pieces of tofu into baking dish, and cover with the marinade.
  7. The tofu can sit overnight in the marinade, or can be prepared right away.
  8. Preheat oven to 375 degrees.
  9. Bake tofu about 35-45 minutes, or until all the liquid is absorbed.
  10. Tofu can be eaten by itself, or added to stir-frys, salads, soups or sandwiches.

Satay Marinate

Ingredients:
  • 4 tablespoons finely chopped shallots
  • 3 tablespoons ground roasted peanuts
  • 1 tablespoon coriander seed, toasted and ground
  • 1 teaspoon cumin seed, toasted and ground
  • 1/2 cup coconut milk
  • 1 teaspoon turmeric
  • 1 tablespoon condensed milk
  • 1 tablespoon palm sugar (or light brown sugar)
  • 2 tablespoons Thai fish sauce
  • 1 pinch salt
  • skewer
  • 1 1/2 lbs boneless chicken breasts
  • salt & freshly ground black pepper
Steps:
  1. In a blender, purée the shallots, peanuts, coriander, and cumin into a paste, then add the remaining ingredients and blend until smooth.
  2. Cut the chicken into strips 1 inch wide, 3 to 4 inches long, and at least 1/4 inch thick, and thread onto skewers.
  3. Coat the chicken with spice paste, and season with salt and pepper.
  4. Heat the grill to medium-high, and cook until lightly charred on one side, then turn to cook other side.
  5. Serve with peanut sauce.
