Fried Cabbage

Ingredients:
  • 1 lb bacon, finely chopped
  • 1 medium onion, chopped
  • 2 lbs cabbage, finely diced
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
Directions:
  1. Fry bacon until crisp and well browned.
  2. Drain and set aside.
  3. Add chopped onion to the bacon grease and stir until translucent.
  4. Add cabbage, pepper flakes, salt and pepper, stirring until all cabbage is coated.
  5. Add the crumbled bacon bits and cover.
  6. Cook over low heat until cabbage is tender.

Fried Squid

Ingredients:

  • 300 g squid, cut into pieces
  • oil for frying
  • 1 tablespoon sea salt
  • 1 tablespoon black peppercorns
  • 75 g cornflour
  • 1 red chile, very thinly sliced,seeds and all
  • 2 green onions, cut into 1 cm pieces

Cooking Steps:

  1. Clean the squids and cut them into pieces.
  2. Heat up the oil.
  3. Place the sea salt and the peppercorns in a pestle and mortar and crush coarsely together.
  4. Stir in the cornflour, then toss with the squid to coat.
  5. Cook the chillies and salad onions in the hot oil for 30 seconds then scoop them out with a mesh spoon and drain on kitchen paper.
  6. Cook the squid for 2 minutes until it rolls up and turns crisp and lightly golden.
  7. Transfer the squid to a plate, scatter over the crispy chilli and salad onions and serve with soy sauce for drizzling and lemon wedges for squeezing over.

Chicken Satay

Chicken Satay is very popular in Kajang. The best thing about this dish is the peanut sauce. Satay is commonly served with slices of cucumbers and ketupats (rice wrapped in banana leaves). This dish is also commonly served on barbecue parties as it is easy to prepare and cook. It doesn't take a very long time to cook and therefore, you wouldn't be afraid that your guests may go hungry for too long. I hope you like this recipe. Ingredients:
  • 1/2 cup creamy peanut butter
  • 1 cup coconut milk
  • 2 tablespoons fresh lime juice
  • 2 tablespoons soy sauce
  • 1 1/2 tablespoons dark brown sugar
  • 1 teaspoon ground ginger
  • 2 garlic cloves, chopped
  • 1/2 teaspoon red pepper flakes
  • 2 lbs chicken cutlets
  • 30 wooden skewers, soaked for 30 mins
Directions:
  1. First mix all the first 8 ingredients and place it into the refrigerator, leaving some to marinate the chicken.
  2. Then cut chicken into strips and marinate in the remaining sauce for 1 hour.
  3. Thread strips onto skewers and barbecue the chicken until it is cooked.
  4. Bring refrigerated sauce to room temp and use as a dip for the chicken.

Barley Lime Drink Recipe

My favourite Balinese drink is a cold iced barley lime drink. I never fail to order this drink whenever I step into a Balinese restaurant. I first came to know about this drink when I had my dinner at Bumbu Bali, a Balinese restaurant in Bandar Puteri Puchong when I was still in the university. It is a very refreshing and cooling drink, a perfect combination with the spiciness of the Balinese food. Just like the name, it is a simple to do drink. I hope you enjoy this recipe.

Chinese Cabbage Stir Fry

Ingredients:

  • 2 tablespoons oil
  • 1 head Chinese cabbage
  • 1 tablespoon minced garlic
  • 1 tablespoon rice wine
  • 1 tablespoon soy sauce

Cooking Steps:

  1. Heat up the oil in a wok over medium-high heat.
  2. Add minced garlic, and stir-fry until it becomes aromatic.
  3. Add shredded cabbage and stir-fry.
  4. Add rice wine and soy sauce and stir until it is cooked.
  5. Add a little bit of sesame oil to taste (you may skip this step).

Escargot - Steamed

Escargot is a delicacy which some people love and some people hate. The thought of those little slimy creatures could be very disgusting to some. At first, I was very, very very reluctant to try it. The thought of having it in my mouth is just too much for me. My husband told me that escargots are not too bad, as they are just vegetarians. Nothing disguisting about them at all. So after convincing myself for a few minutes, just to try them, I just took it and swallowed it. It was actually quite tasteless and, definitely not slimy. Here is the recipe for cooking escargot.

Ingredients:

  • Escargots
  • Ginger
  • Salt

Steps:

  1. Clean the escargots and place them back into the shells.
  2. Place them on a plate and spread out the thinly sliced ginger.
  3. Add some salt and place them into the steamer once the water is boiled.
  4. Remove from steamer after 3 to 4 minutes and serve warm.
