Bak Kut Teh Recipe (Soup Version)

Bak Kut Teh is my all time favourite dish. Whenever I am feeling sick, I would head towards a bak kut teh restaurant for a nice pot of herbal pork soup. Bak Kut Teh is not easy to do, but is still possible to cook it in your very own kitchen. If you do not like the long process of cooking it, you may purchase the pre-packed herbs in any chinese sundry shop and follow the instructions on the pack. If you are interested in cooking everything on your own, try the following steps.

Kam Heong Style Lala - Clams

The best kam heong style clams which I had is at Ah Go Go restaurant in Kepong. I may be wrong, but after going around Kepong, I find that this restaurant can cook this style the best. Another best alternative would be B Lui at the Kepong wai sek kai, a hawker stall located in Kepong Baru. Anyway, here is the closest recipe I find which is good enough but definitely not the same with those you will get at the above mentioned restaurants. But it is good enough if you prefer to cook it yourself.

Ingredients:
  • 1 kg clams such as lala clams
  • 2 tbsp dried shrimps
  • 1/4 cup hot water
  • 1 tbsp curry powder
  • 2 tbsp cooking oil
  • 3 shallots finely chopped
  • 3 garlic cloves minced
  • 2 ginger slices minced
  • 2 chilli padi
  • 1/2 tbsp soy bean paste
  • 4 sprigs curry leaves
  • cornstarch
Steps:
  1. Clean the clams thoroughly by soaking with salt water and scrubbing them.
  2. Chop the dried shrimps, shallots, garlic, ginger chilli padi together.
  3. Heat up the oil and pour in the ingredients including the soy bean paste, hot water and curry powder.
  4. Pour in the clams and cook until the clams are all open.

Ceasar Salad Recipe

I went to a nice western restaurant the other day. I am sure that many of you notice that the price for a plate of ceasar salad could cost almost the same with a plate of chicken chop. I was wondering about the margin of profit that the restaurant could make if everyone that comes in opts for ceasar salad instead of chicken chop. Most people will definitely go for chicken chop, given the fact that it is worth the money spent on. So if you are like one of them and would also love to have ceasar salad one day, why not make your own? Here's a recipe which I found. Enjoy.

Steamed Fish with Ginger sauce

The best way to enjoy fresh fish is by steaming them. The freshness of the fish can be tasted by steaming and you do not need to go through the trouble on how to marinate your fish to become tastier. The freshness of the fish will do the job. However, fresh fish do sometimes taste fishy. In order to get rid of the smell, the Chinese uses ginger whenever they cook their fish. I am going to show you the way how to prepare the ginger sauce for steaming fish. You may use any fish here.

Ingredients:

  • lots of fresh ginger
  • Fish
  • Light soya sauce
  • Parsley

Steps:

  1. Clean the fish and place it on a plate. Slice the fish a little bit on the middle on both sides.
  2. Remove the ginger skin and cut them into pieces.
  3. Blend the ginger in a blender and add some water until it become a ginger puree.
  4. Spread the ginger puree on the fish until the whole fish is fully covered. Place some ginger puree in the stomach to get rid of the smell.
  5. Pour some light soya sauce over the fish.
  6. Steam the fish in high heat for about 10 to 15 minutes, depending on the size of the fish.
  7. Garnish with parsley and serve warm.

Chinese Steamed Fish

The steam method is the best way to cook a fish. However, if the fish is not fresh, it is better to shallow fry it or cook it with sauces in order to eliminate the fishy smell of the fish. I prefer to steam rather than to fry my fishes as it is easier to prepare and to cook. Here are the ingredients and methods to cook a steamed fish.
