Green Curry Chicken - Thai Style

Green curry chicken may sound very complicated to do but it is not. In fact, curry is easy to cook and all you need is the right amount of ingredients. All you need to do is to buy the correct ingredients and gather them in the correct amount. If you have gone to a Thai restaurant before, you will notice that in green curries, they tend to use the breast meat of a chicken. I found that this part of the chicken is a little bit too tough. So if you prefer other parts, feel free to use them. There is no hard and fast rule on which part of the chicken you should use in this recipe. I would stick to the chicken breast meat as there are less fat. Let look at the ingredients in preparing green curry chicken and the steps involve in cooking it.

Green Curry Chicken

Ingredients:

  • Chicken (sliced into small pieces)
  • 100 ml Coconut milk
  • 100 ml water
  • 1 spoon Vegetable oil
  • 1 spoon Green curry paste
  • 2 spoons Fish sauce
  • Sugar
  • Green beans
  • Kaffir lime leaves

Steps:

  1. Heat up a pot and add oil.
  2. Then stir in the curry paste and mix it well.
  3. Add the chicken and mix it.
  4. When the chicken is almost ready, stir in the coconut milk.
  5. Add the fish sauce and sugar. You may skip the sugar if you do not like your dish to be too sweet.
  6. Add the water and green beans.
  7. Once it is boiled, remove it from the heat. Place the kaffir lime leaves as decoration.

How to make Garlic Bread like a genius

To make a garlic bread, you will need a loaf of French bread. You may purchase it from the stores or bread shop just to make things simple. I wouldn't recommend you to bake yourself as sometimes the cost to make one is even more expensive than you buy outside. What I would normally do is that I would buy a loaf of French bread from the store. Each loaf can be kept up to 5 days, so you have plenty of time. In order to make garlic bread like a genius, just follow the following steps as shown below.

  • 1 loaf unsliced French bread
  • 1/2 cup butter
  • 2 garlic cloves, halved
  • 1 teaspoon dried parsley
  • 1/3 cup grated parmesan cheese

Steps:

  1. Preheat oven to 375F degrees.
  2. Cut slices down the length of bread loaf at 1 inch intervals, without cutting all the way through.
  3. Rub slices and top of loaf with cut sides of garlic.
  4. Mince garlic.
  5. Combine butter, garlic, parsley and Parmesan.
  6. Spread butter mixture between bread slices and on top of loaf.
  7. Wrap bread in foil leaving top partially uncovered.
  8. Bake until heated through, about 15 minutes.

Medium Rare - Beef

When I was younger, I think that beef is too tough for me. We used to order our beef cooked thoroughly and it was too tough. Sometimes too tough that my tooth hurts when I am chewing them. I eventually avoided ordering beef whenever I go to any western food restaurants. After meeting one of the owner of a restaurant which serves premium beef such as Kobe beef and Wagyu beef, I learned from her that the best method to enjoy beef is to have them medium rare. So what is medium rare I asked her. A medium rare steak should be warm through the middle with a hint of red. Most of the center of the steak should be pink in colour.

In order to cook beef with the level of doneness of medium rare, you should first choose a thicker piece of meat weighting about 230gms to 350gms depending on how much you can eat. The reason for this is that beef cooks really fast and in order to ensure that the middle is pink, the piece of beef should be sufficiently thick.

Ingredients:

  • Beef
  • sea salt
  • pepper
  • oil

Steps:

  1. First marinate the piece of beef with sea salt and pepper.
  2. Heat up oil on a pan.
  3. Cook the beef, about 3 minutes, each side and serve immediately.

Mashed Potatoes

You do not need to be a chef to make good mashed potatoes. However, there are many things that could ruin your mashed potatoes. The amount of milk you put into it and the amount of butter you mixed it with are the two important things you must observe when you are making yourself some mashed potatoes. In order to get the correct recipe - which best suit your taste, you will need to do it many many times to get it right. Something getting the recipe from the internet may not suit your taste. So, I would strongly suggest you to put in some effort and practise. After all, practise makes perfect, right? Anyway, here is a way you could refer to. I hope you like this recipe.

Ingredients:

  • 3 lbs potatoes (about 4 large)
  • 2 tablespoons butter
  • 2 (3 ounce) packages cream cheese
  • 2/3 cup sour cream
  • 1/4 cup milk
  • salt - depending on your taste
  • 1 tablespoon butter or 1 tablespoon margarine, melted

Steps:

  1. Place potatoes in a saucepan; add water to cover and add salt.
  2. Bring to a boil then reduce the heat and boil the potatoes until it soft.
  3. Then drain away the water.
  4. When the potatoes are cooled down, peel the potatoes and mash it with a potato masher.
  5. Add 2 tablespoons butter, cream cheese, sour cream, milk and salt.
  6. Mix until all ingredients are blended.

Barbecue Potatoes

I had a barbecue party last weekend and I would like to share with you how I cook my potatoes on the barbecue grill. The traditional method used in a barbecue grill for fire is charcoal and lot of charcoal. There are many types of charcoal, but I recommend you to buy the Japanese charcoals as it burns longer and the fire is more even. It costs just a little bit more compared to the normal ones. Since potatoes can be burned very easily on the outside, I would recommend you use an aluminium foil instead. Below is the steps for cooking potatoes on a barbecue grill. Note that, you may also use this same method on barbecue equipment operated with gas or electricity.

  1. First, wash the potatoes leaving the skin on.
  2. Then wrap them up individually using an aluminium foil.
  3. Thereafter, dip it into a bowl of water and immediately place them on the burning charcoal.
  4. Turn it around in order to make sure that the potatoes are cooked thoroughly.
  5. Depending on the size, the time to cook each potatoes varies.
